Skillet Dinner Rolls
Ingredients
- 2 packets active dry yeast, total 1/2 oz or 14 g + 1 tablespoon sugar
- 1/4 cup warm water
- 1 1/4 cups milk
- 5 tablespoons sugar
- 3/4 teaspoon salt
- 1/4 cup unsalted butter
- 4 1/2 cups all-purpose flour, sifted
- 1 large egg
- baking spray
- 1 teaspoon kosher salt
- 3 tablespoons unsalted butter, melted
Instructions
- Dissolve the yeast and sugar in warm water. Heat the milk with the sugar, salt, and butter until lukewarm.
- Add the egg to the yeast mixture. Combine the yeast mixture, milk mixture, and all of the flour. Stir well to combine. Cover the dough and let it rest for 15 minutes. Using a stand mixer with a dough hook, knead the dough for 5 minutes.
- Preheat the oven to 375°F (190°C).
- On a floured surface, roll out the dough and divide it into 18 balls, each about the size of a small tennis ball. Cover and let rise for 25 minutes. Spray a 10-inch (25 cm) cast-iron skillet with baking spray and arrange the dough balls in the skillet. Sprinkle the kosher salt evenly over the surface. Bake for 10–12 minutes, or until the surface of the dinner rolls turns golden brown. Brush with melted butter and serve warm.

I tried to make these, unfortunately the recipe was very confusing. My rolls never rose, turned out like golf balls. Still not sure how much yeast is required and do you use a stick of butter – it says 1/4 and 1/2 stick? Which is it?
1/4 cup is the same as 1/2 stick butter. 2 packets of dry yeast as stated clearly in the recipe.

I baked them for 15 minutes @ 375F, until they were golden brown, let cool in the pan while I got the rest of my dinner ready to serve {10 min.}… The rolls were so light and fluffy, so airy, by far the best Ive ever eaten ! I made sure to leave room in my belly for a 2nd roll, I made them big {fit 9 in the skillet}. I froze the other half of the dough. Pretty sure I’m going to make cinnamon rolls with it.

my jar of active dry yeast has “1 packet = 2 1/4 tsp” on the label. Try checking your jar for the packet conversion.
They are so delicious and delicate.oh man and super easy. Smell awesome rolls..lol
They have been in the oven for 17 minutes at 375F and are insipidly pale and doughy. No way they could bake in 10-12.
Wouldn’t you just let them rise in the skillet!
Should I go ahead & cover the side of the cast iron skillet with foil to begin with or just wait till I notice the sides are browning faster than the middle?
You can cover from the beginning if you like.
I have packets if fast rising yeast. You called for 2 packets (3/4 oz or 21g). The packets are 1/4 oz each & 7g which means I would need 3 packets. Is that right?

Is the dough sweet? I live in South East Texas and they all eat sweet bread. Nasty. Unfortunately for me I wasn’t born here and haven’t acquired a taste for sweet bread.

If I don’t have a stand mixer, can I knead by hand? Or hand mixer (with only the standard attachment)?
I think you can knead by hand but it will be difficult to do with a hand mixer, I think.

I just made these! I used a copper skillet and baked 10 minutes longer, also used coconut flour, oil ,sugar, and almond milk! They are fantastic! Light, fluffy, yummy!
