Skillet Dinner Rolls

Ingredients  

  • 2 packets active dry yeast, total 1/2 oz or 14 g + 1 tablespoon sugar
  • 1/4 cup warm water
  • 1 1/4 cups milk
  • 5 tablespoons sugar
  • 3/4 teaspoon salt
  • 1/4 cup unsalted butter
  • 4 1/2 cups all-purpose flour, sifted
  • 1 large egg
  • baking spray
  • 1 teaspoon kosher salt
  • 3 tablespoons unsalted butter, melted

Instructions 

  • Dissolve the yeast and sugar in warm water. Heat the milk with the sugar, salt, and butter until lukewarm.
  • Add the egg to the yeast mixture. Combine the yeast mixture, milk mixture, and all of the flour. Stir well to combine. Cover the dough and let it rest for 15 minutes. Using a stand mixer with a dough hook, knead the dough for 5 minutes.
  • Preheat the oven to 375°F (190°C).
  • On a floured surface, roll out the dough and divide it into 18 balls, each about the size of a small tennis ball. Cover and let rise for 25 minutes. Spray a 10-inch (25 cm) cast-iron skillet with baking spray and arrange the dough balls in the skillet. Sprinkle the kosher salt evenly over the surface. Bake for 10–12 minutes, or until the surface of the dinner rolls turns golden brown. Brush with melted butter and serve warm.

Notes

For this recipe, you will need about 2 pounds of the dough. You can freeze the remaining 1 pound of dough in the freezer, thaw and use it later, or you can use a bigger skillet and use up all the dough. If the sides of the dinner rolls are turning dark faster than the middle, cover te rolls on the side with aluminum foil and expose the middle part of the dinner rolls. This will help to even it out.

    Made these today. They didn’t quite turn the golden brown as in the picture. I baked for 13 minutes and took them out because I didn’t want them to harden. Followed recipe to a T. Any suggestions?

      Hmmm, bake it longer as every oven is different. Mine was 13 minutes. The dinner rolls on the sides would turn brown faster than the middle ones so you can cover the side rolls with aluminum foil and continue to bake the ones in the center to become golden brown.

    You mention that only 1.5 pounds of dough is needed for this recipe, but how much dough does the recipe make? Couldn’t we just use a bigger skillet to use up all of the dough? What size skillet did you use?

      Hi Jeanette, it was actually about 2 lbs as we tried the recipe again today, I have a 10-inch skillet. The dough will come out to be 3 lbs.
