Do I Need Yeast To Make A Quick Bread Recipe

One of the nicest things about making quick breads is how quick and easy they are to make. Rather than using yeast to help the bread rise, quick bread recipes call for baking soda, baking powder, or both.

Those types of leavening agents cause batter to rise while it’s baking in the oven. As a result, you won’t have to wait very long to enjoy a slice of Pina Colada bread!

Is There Alcohol In Pina Colada Bread

So that everyone in the family can enjoy the bread, this quick bread recipe is non-alcoholic. If you want the bread to have rum flavor, it isn’t a problem. Just add 1/4 teaspoon of rum extract or a tablespoon of actual rum to the batter.

Can I Freeze Quick Bread

Yes, you can freeze this bread, which is a great thing, because it makes fantastic hostess gifts.

To freeze the Pina Colada bread, wait until the loaf is completely cool first. Then, tightly cover it with plastic wrap, followed by a layer of aluminum foil.

If properly wrapped, the quick bread should keep well frozen for 3 to 4 months.

Will This Quick Bread Recipe Work For Muffins

Close up image of a quick bread recipe made with toasted coconut and crushed pineapple.

Most recipes for quick bread are easy to convert for making muffins instead. Just line a cupcake pan with paper liners and grease them with non-stick cooking spray.

Fill the liners two-thirds full with Pina Colada bread batter, then add toasted shredded coconut on top. Bake at 350 degrees F for 18 to 22 minutes.

Test for doneness by inserting a toothpick into the center of the muffin (or the loaf). If it comes out clean or with a few moist crumbs, the bread or muffins are ready to remove from the oven.

Ingredients

  • 3 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 large eggs , slightly beaten
  • 1/2 cup unsalted butter, 1 stick, melted
  • 1 can crushed pineapple, 20 oz (570g)
  • 1 cup coconut cream
  • 2 tablespoons Greek yogurt

Topping

  • 1/3 cup remaining coconut cream
  • 1/2 cup sweetened coconut flakes, toasted

Instructions

  • Preheat the oven to 350°F (176°C) and grease 4 mini loaf pans with non-stick cooking spray. In a large bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
  • In a medium bowl, combine the eggs, melted butter, pineapple with its juice, and 2/3 cup of coconut cream and Greek yogurt. Stir until blended. Add this mixture to the flour mixture, stirring just until moist.

To toast coconut:
Spread the sweetened coconut flakes evenly on a baking sheet. Place in oven at 350 degrees F. Bake for 5-7 minutes or until golden brown. Stir a few times while baking.
You can also toast the sweetened coconut flakes on a skillet by stirring the coconut flakes back and forth with a wooden spatula until they turn golden brown.

  1. Sheliah says:

Do you have to put the Greek yogurt in it? Is there something else that can be added or can it just be left out.

    1. Rasa Malaysia says:

      You can add milk.

  2. Marilyn Tolan says:

I don’t have Greek yogurt—-can I use sour cream instead?

    1. Rasa Malaysia says:

      Yes, you can!

  3. Rekha says:

What can I replace the eggs with if I want to make it vegan?

    1. Rasa Malaysia says:

Sorry I don’t know how to replace eggs.

    2. Bonnie says:

Egg replace with Aquafaba which is the liquid from a can of garbanzo beans. Can be used to replace eggs in anything except quiche and omelets. I freeze the liquid in ice cube trays and 3 cubes equals one egg. Look up uses on internet.

  4. Kelly says:

Can I use a Bundt cake pan? If so what temp & how long? Not much of a baker.

    1. Rasa Malaysia says:

Sure, it should the same temperature and baking time. If not, check doneness by inserting a cake tester.

  5. Juju says:

How long and what temp for a 4 x 8 pan?

    1. Rasa Malaysia says:

Same temperature but might take shorter to bake. Check doneness at 30 mins.

  6. L says:

Is coconut cream the same thing as cream of coconut (eg Coco Lopez)?

    1. Rasa Malaysia says:

      It should the same.

  7. Penny says:

Where do you find the Coconut Cream?

    1. Rasa Malaysia says:

You can find it at Asian stores, it’s thicker than coconut milk.

    2. Bonnie says:

In the liquor section of your grocery store.

  8. Lilly says:

What size are your mini-loaf pans?

    1. Rasa Malaysia says:

      Standard mini loaf pans.

  9. Jennifer J Hoover says:

Mine was an epic fail. It was the first time, ever making a bread loaf. I put it all into a 9×5 pan, since I read the in the comments, it was ok. The only thing I changed, was I used coconut flour. It was my first time using this flour, too. Other than that I followed all the directions. I’m going to assume it was the flour and lack of experience. The mix was of the consistency of brown sugar when I put it in the tin. I had a feeling something might be wrong. I pressed it down and compacted it onto the pan, not sure if I was supposed to do that either. Oh well, I’m glad it worked out for everyone. I’ll try again, I’m sure.

    1. Rasa Malaysia says:

Hi Jennifer, I am sorry you failed. For baking, you really can’t substitute, it won’t work. Coconut flour is not all purpose flour, there is no way this recipe would work with coconut flour.

  10. Marilyn Tolan says:

Do not own mini loaf pans. Can a loaf pan (4×8) be used instead?

    1. Rasa Malaysia says:

      Yes, you can!

      1. Kathy says:

Would it take one 4×8 or two pans
