Parmesan Roasted Cauliflower

Ingredients  

  • 8 oz. (230g) cauliflower florets, sliced horizontally
  • 2 tablespoons butter, melted
  • 1 tablespoon olive oil
  • 1 pinch salt
  • 3 dashes ground black pepper
  • 1/2 cup shredded Parmesan cheese
  • 1 teaspoon chopped parsley leaves

Instructions 

  • Preheat the oven to 400°F (207°C). Toss the sliced cauliflower with butter and olive oil. Season with salt and black pepper. Transfer the cauliflower to a baking sheet in a single layer and roast until almost tender, about 20-30 minutes.
  • Remove from the oven and sprinkle the grated Parmesan and chopped parsley over the cauliflower. Roast again until the cheese melts and becomes slightly crusty, about 5 minutes. Remove from the oven and serve immediately.

    We love roasted cauliflower too. My husband isn’t a cauliflower fan, he says he only likes it if it doesn’t taste like cauliflower. :-) So, besides cauliflower fried rice or pizza, roasted cauliflower is his favorite. I used this parmesan and basil olive oil I have and it’s so delicious. I also like how you added parmesan cheese. I’d never done that before. It was perfect!
