Not many people can resist a good piece of rich chocolate cake, and I am no exception.

Today, I am sharing with you my friend CP Choong’s recipe, a no bake chocolate cake recipe. (You can check out the regular baked chocolate cake recipe here.)

Yes, you don’t have to bake the chocolate cake…in this instance, the chocolate cake is steamed, yet it retains the buttery richness, plus it’s also moist and decadent.

A piece of homemade no bake chocolate cake dusted with flour and decorated with berries.

While oven is in almost every household here in the United States, back in Asia, not every home comes with an oven.

I remember when I was growing up, my late mother would only bake once in a blue moon, probably once a year, before Chinese New Year.

We had a very old-fashioned oven, a big around device that is stainless steel, with a big round cover.

It did its job well and we would bake Chinese peanut cookies in it.

For the rest of the year, we kept the oven in the storage until the next year before Chinese New Year again.

Anyway I disgress.

I meant to say that this no bake chocolate cake is great if you have no oven.

Everyone loves chocolate cake and you can still enjoy it without investing in an expensive oven.

You just have to steam it in a steamer for 45 minutes and you have a moist chocolate cake.

It’s really delicious and people might not even know that it wasn’t baked.

This no bake chocolate cake also comes with a chocolate fudge topping, which makes the chocolate cake even more irresistible.

To jazz it up even more, add some berries such as blueberries and strawberries and you have an excellent looking chocolate cake to impress everyone.

Look at these pictures, can you say no?

Happy steaming your cake and enjoy!

Ingredients

  • 180 g (6⅓ oz) Butter
  • 200 g (7 oz) Castor sugar
  • 200 g (7 oz) Full cream evaporated milk
  • 2 eggs, slightly beaten with fork
  • 100 g (3½ oz) plain flour, or all-purpose flour
  • 50 g (1¾ oz) cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract, or 1 tsp Vanilla essence
  • 2 tablespoons rum, optional

Chocolate Fudge Topping

  • 200 g (7 oz) condensed milk
  • 1/2 teaspoon vanilla extract , or 1 tsp vanilla essence
  • 2 tablespoons corn oil
  • 20 g (7 oz) cocoa powder, sieved
  • 1 pinch salt

Instructions

  • Combine caster sugar, evaporated milk, vanilla extract or essence, and butter in a saucepan. Stir over low heat until the sugar dissolves and the butter melts. Remove from heat and keep warm. Once the evaporated milk mixture has slightly cooled, add the beaten eggs and stir until well mixed.
  • Sift the flour, cocoa powder, baking powder, and baking soda into a large mixing bowl. Pour the egg mixture over the flour and stir until well mixed (the cake batter should be runny).
  • Heat up the steamer. Line and grease an 8 or 9-inch (20 or 23 cm) round baking pan. Pour the batter into the lined pan, place the pan in the steamer, and cover the top loosely with a piece of aluminum foil. Cover the steamer and steam over medium heat for 45 minutes. Allow the cake to cool in the pan before turning it out for further decoration.

To make Chocolate Fudge Topping:

  • Combine the sifted cocoa powder, condensed milk, and oil. Stir over low heat until thickened.
  • Add the salt and vanilla extract or essence. Allow the chocolate topping to cool slightly before spreading it on the cake. Refrigerate before serving.

Notes

You may substitute the fudge topping with ganache, icing sugar, frosting etc.

It’s so good, very moist and chocolatey. Too lazy to make the topping so I drizzled Hershey Choc Fudge instead. And it being no-bake means less oily washing..I used brown sugar and no rum.

      1. Sharon says:

Hima . You can replace eggs with a gel made from 1 part white chia seeds and 9 parts water. Whisk to blend. Stand for 15 minutes and whisk again. Store in an airtight container in the fridge for 2 weeks. Use the gel in place of eggs, oil and butter in many baking recipes.

  5. Alice says:

Hi. Do I need to put water in the steamer and cover the cake with foil…or just dry steam. Please explain

    1. Rasa Malaysia says:

      No need to cover.

  7. Jenny says:

I tried this today and though it was super easy and quick, the cake was denser at the base and it didn’t rise at all. My cake was inly about 1 1/2 inches high. Taste is good though but because it didn’t rise, I skipped the fudge icing.

    1. Rasa Malaysia says:

      Did you steam it?

      1. Jenny says:

Yesh did. It tastes really good like fudge but it didn’t rise. Should I try it with cake flour? I’m using Rogers white.

        1. Rasa Malaysia says:

          Not familiar with that flour.

    2. Dhsnbs says:

SO you suck at baking, practice makes perfect Jenny!?โค๏ธ?

  8. Raqz says:

Hello ! I did try this and it turned out fairly good. I am doing it again tomorrow but I like to know if the butter should be salted or unsalted and when will the rhum if I like to put some be added? TIA and more power !

    1. Rasa Malaysia says:

      Unsalted.

  9. ghytri says:

Hi. I’m hoping you could help me out with this. What’s the difference between soda bicarbonate, baking soda and baking powder? Tia

    1. Rasa Malaysia says:

I think the first two are the same. Baking powder has baking soda plus other stuff: http://www.simplyrecipes.com/the_difference_between_baking_soda_and_baking_powder/

      1. ghytri says:

Tq for the reply. Can I use self raising flour which has sodium bicarbonate in it for this recipe? If yes how much baking powder and baking soda need to use?

  10. Nix says:

Hi, may I know if I could use the same recipe and make it into cupcakes instead?
How long would I need to steam?

    1. Rasa Malaysia says:

I think so I have no idea, just insert cake tester to test it.
