Whenever I’m out of meal ideas, I know that chocolate will always be a hit with him. While I limit his sugar and chocolate intake, I do reward him with his favorite treats when he’s been a good boy.
So when I came across Nigella’s double chocolate chip muffin recipe on Food Network, I knew I had to try it. I don’t mind indulging in some delicious chocolate muffins myself, so I baked a batch last week for the family.
I made them into mini muffins, and they turned out absolutely delicious.
How To Make Nigella Chocolate Muffins
Preheat the oven to 400°F (204°C). Mix flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup chocolate chips in a bowl. Whisk milk, oil, egg, and vanilla in another bowl. Combine wet and dry ingredients, then spoon into muffin cases. Top with remaining 1/4 cup chocolate chips and bake for 20 minutes until dark, risen, and springy.

Ingredients

- Slowly pour the wet ingredients into the dry ingredients and mix until just combined. Spoon the mixture into the prepared muffin cases. Sprinkle the remaining 1/4 cup of chocolate chips on top, then bake for 20 minutes or until the muffins are dark, risen, and springy.

Hi I baked this muffins yesterday. I realized the outer crusts and bottom of the sides of the muffins are hard while its inner layer is moist and soft. Can i know what went wrong?

I think you should just use sugar. Apple sauce has too much water content I think and will probably render this recipe unsuccessful.

You can use regular muffin case…might have to bake longer.
