When it comes to summer BBQ parties, one item that is always on my menu is BBQ wings.
When it comes to grilling time, chicken wing is the way to go.
One of the most delicious grilled or BBQ chicken wings recipes is Lemongrass Wings, using lemongrass and fish sauce to marinate the wings. This recipe is Vietnamese-inspired.

This is an easy recipe as the ingredient lists are pretty short: lemongrass, fish sauce, garlic, honey, and black pepper. Marinate the wings overnight and fire up your grill the next day.
If you don’t have a grill, you can bake these wings in the oven and then broil it for a couple of minutes to char the surface. You can also use a grill pan and cook on stove top.
For the chicken wings, get smaller party wings if you can. These days, all the wings are rather big, so I always look for “party wings” whenever I have BBQ.
Party wings are are small but still meaty. They are just perfect for BBQ as they cook fast and more importantly, they will be cooked through before burning.

Lemongrass Wings
Ingredients
- 2 tablespoons lemongrass, grated
- 2 stalks lemongrass, pounded
- 1 1/2 lbs (750g) small chicken wings, party wings
- 3 tablespoons fish sauce
- 5 cloves garlic, peeled and smashed
- 1 tablespoon honey
- 1/4 teaspoon black pepper, coarsely cracked
Instructions
- Use a grater, such as a Microplane, to grate the white part of the lemongrass until you have about 2 tablespoons. Keep the rest of the lemongrass and cut it into 4-inch (10 cm) lengths. Use the back of a knife to pound and smash the lemongrass to release its aroma and flavor.
- Rinse the chicken wings under cold water and pat them dry with paper towels. Transfer the wings to a large Ziploc bag and add all the ingredients. Combine everything well, ensuring the wings are nicely coated with the fish sauce and lemongrass mixture. Let them marinate in the fridge overnight.
- Fire up the grill the next day. Grill the wings until they are golden brown and nicely charred on both sides. Serve immediately.

These wings are very delicious! The lemongrass gives a nice twist to the ordinary wings.

What brand of fish sauce do you use or recommend?
I use Red Boat fish sauce, I think you can get it at certain Whole Foods now. If not, you can use Magic Chef, or Three Crabs brand.
