- Potatoes
- Olive oil
- Melted butter
- Garlic
- Parsley
- Lemon juice
- Honey
- Black pepper

How To Make Lemon Herb Roasted Potatoes
Step 1. Preheat the oven to 350°F (176°C). Cut slits in the potatoes without cutting all the way through. Mix all the ingredients for the oil mixture together.
Step 2. Place the potatoes in a roasting pan and brush them with the oil mixture, making sure to coat inside the slits. Reserve some of the mixture for basting.
Step 3. Roast the potatoes for 1 hour, basting with the remaining oil mixture at 30-minute intervals. Serve immediately after roasting.
Cooking Tips
- As a trick to cut these potatoes perfectly, line up two chopsticks horizontally on each side of the potato. Then, use a knife to cut vertically. This will help you not cut all the way through the potatoes.
- Then, butter up the potatoes in the spices, making sure to get it in between each potato slice.
- Your potatoes will be roasted to perfection, soaking in every flavor!

I make potatoes similar to this recipe in the cut I put a very thin slice of onion for the grill and wrap them in foil.
i usually don’t make a recipe for company before trying it out first. I wish I had done that with this recipe. The potatoes were slightly leathery and dry in consistency and lacked that pop of flavor I was hoping for.

It looks like you have extra, whole cloves of garlic in the pan with the potatoes? Can you please advise.
You can add 1 head of garlic cloves in the pan but not necessary.

Would this recipe work for Russets? We just got a 5lb bag and would love to make these to use some of them up!
I think so but Russets are bigger so might take longer to roast.
If potatoes are large you can cut them in half lengthwise, stand the potatoes on the flat end & then cut.
