Add garlic, parsley and salt and you’ll have one of the best carrot recipes. This buttery and garlicky honey roasted carrots is absolutely delicious and picky eater friendly.
What Carrots To Use
This time of year, carrot tops are fresh and abundant in farmers market and stores. I used carrot tops but you can certainly use regular carrots or baby carrots.

The secret to this recipe is to roast the carrots at 400F for 25-30 minutes (depending on the size of your carrots) so they become so tender that they taste almost like roasted sweet potatoes!

Honey Butter Roasted Carrots
Ingredients
- 1 lb (500g) carrots, tops trimmed and skin peeled (two bunches carrot tops)
- 2 tablespoons butter, melted
- 2 cloves garlic, minced
- salt , to taste
- freshly cracked black pepper
- 2 teaspoons parsley leaves, finely chopped
- 2 tablespoons honey, or maple syrup or to taste
Instructions
- Preheat the oven to 400°F (207°C).
- Toss the carrots with the melted butter, garlic, a large pinch of salt, black pepper, parsley, and honey in a large bowl. Then, transfer them to a baking sheet lined with parchment paper.
- Spread the carrots out in a single, even layer and roast for about 25-30 minutes, or until they are fork-tender and lightly browned.

Hi there! I am making these carrots tonight with my meatloaf. The meatloaf needs to bake for 1 gr @ 350 so I would like to throw in the carrots at the same time. Will I need to adjust my baking time @ 350? I see the recipe recommends 400…Any help would be greatly appreciated :)
That’s fine just bake slightly longer so they are tender.

The “benefits” of honey are over touted. Sure, it’s maybe slightly better for you than refined white sugar, but really only barely. Your body processes it the same as any other sugar. It’s something to be used in moderation and not as a “health food.” There’s really no point in worrying about “losing the benefits” of honey in a recipe like this, because you shouldn’t be relying on a sugar for your nutrients anyway, see what I mean?
