What is a crepe?

Crepes are French pancakes. They are thin and slightly crispy on the outer edges.

They are found in many places in France, for examples: creperies, cafes, bistros or on roadside stands.

French crepes are usually served sweet with powdered sugar (called crepe sucrée in French). They can also be served savory and called galettes.

It’s very easy to make this French delicacy at home. The crepe recipe is very easy and calls for simple ingredients:

  • All-purpose flour
  • Sugar
  • Salt
  • Whole milk
  • Eggs
  • Unsalted butter

How To Make Simple Crepes

In this easy crepe recipe, I will teach you the step by step method on how to make crepes at home.

First, puree flour, sugar, salt, milk, eggs and butter in a blender until the batter is smooth.

To make the pancake, heat a nonstick pan over medium heat and coat with butter. Then add the batter and swirl around to over the pan evenly. Cook both sides of the pancake until light brown.

When it’s done, loosen the edge of the crepe with a rubber spatula and serve immediately.


Sweet Crepes Vs Savory Galettes

Sweet crepe recipe calls for all-purpose flour, milk, sugar and water to make the batter.

The fillings are always sweet. They are more like a dessert or a sweet snack.

Traditional savory galettes uses buckwheat flour, salt and water as the batter ingredients. As a result, they are brownish in color. They are eaten as a meal.

Traditionally, crepes are made with a big flat crepe pan, a wooden spreader and a turning paddle. For make this crepe recipe, you can buy an electric crepe maker on Amazon but you can use a 12-inch non-stick or cast-iron skillet or pan. If you use cast-iron skillet, make sure that it’s well seasoned.

How do I serve with crepes?

I like serving the pancakes with berries, powdered sugar and maple syrup. You can also serve them with melted butter and powdered sugar, which is the most classic way of eating and serving crepes. You may add also add whipped cream, chocolate sauce, salted caramel sauce as toppings.

Ingredients  

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups whole milk
  • 4 large eggs
  • 4 tablespoons unsalted butter, melted

Instructions 

  • In a blender, combine the flour, sugar, salt, milk, eggs, and butter. If you don't have a blender, mix everything together using a whisk. Purée until the mixture is smooth and bubbles form on top, about 30 seconds.

  • Heat a 12-inch (30 cm) nonstick skillet or pan over medium heat. Lightly coat it with butter. Add 1/3 cup of batter and swirl it to completely cover the bottom of the skillet; the crepe should be about 8 inches (20 cm) in diameter.
  • Cook until the underside of the crepe is golden brown and the edges are crispy, about 2 to 3 minutes.
  • Loosen the edge of the crepe with a rubber spatula and quickly flip it over. Cook for 1 minute. Slide the crepe out of the skillet and repeat with the remaining batter, coating the pan with butter as needed.
  • Fold the crepes over and serve immediately with powdered sugar, maple syrup, Nutella, or chocolate sauce. Add berries of your choice, if desired.

Notes

You may make crepes in advance. Stack crepes with wax paper or aluminum foil and refrigerate, up to 3 days.

    I like putting cottage in center of crepe with some strawberry jam, roll it and spread a little sour cream on top with fresh strawberries. If you don’t like sour cream us cool whip. Yummy.

    Made these this morning for my husband and they were delicious! I did add a touch of vanilla to the batter. I topped them with fresh sliced strawberries and bananas and sprinkled powdered sugar on them and he was a happy happy boy. I had never even looked at a crepe recipe before because I automatically assumed they were difficult and timely to make. SO glad I saw your recipe and tried it!

    Crepes are delicious but I’d hardly call them healthy – mostly white flour and sugar and that’s without nutella or chocolate sauce or other bad for you toppings. I certainly wouldn’t be feeding them to children as a regular breakfast.

      I think it’s pretty healthy when it’s served with berries. It has full milk, eggs and carb, I think it’s a pretty decent breakfast.

        Lynn. you can fill the crepes with savory fillings as well, it does not have to be just sweet fillings.
        any filling goes. and you can make them with different flours as well. and you can serve Healthy fruit along with the crepes. you can definitely make them healthy for yourself Lynn.

      You can certainly make them with whole wheat flour, and the toppings are up to you. My mom served them with a stingy smear of jam, and the traditional French way is with lemon juice. In my house, we like desert crepes with fresh sliced strawberries; savory crepes with sauteed mushrooms and a light sprinkle of grated gruyere. You can also make them with buckwheat and with any flour use any sort of omelette filling. When my kids were small, they used to grab them as soon as they were released from the pan, sprinkle with lemon and gobble. Buckwheat was the breakfast fave.

      Only a 4* rating for this recipe because it left out the key step–let the batter rest for 30-60 minutes to absorb the flour

        i did not see that step in Bee”s instructions. it just goes from Blender to frying pan.
        i checked through the instructions twice and i did not see that step listed there, however it does not mean that you cannot let the batter sit for 30 to 60 minutes to absorb the flour if you want to.
