I always have mushrooms in my fridge because little G loves mushrooms. I usually make a simple garlic herb sauteed mushrooms for him when he is not in the mood for meat.

Some days when I want something different, I make this amazing, buttery, garlicky and cheesy garlic Parmesan roasted mushrooms loaded with garlic and Parmesan cheese.

I used both bottled Parmesan cheese, grated Parmesan cheese, and lots of garlic for this recipe. Try it, it’s SO good!

Garlic Parmesan Roasted Mushrooms

Ingredients  

  • 12 oz (350g) cremini , or white mushrooms, stem trimmed
  • 1/2 stick butter, melted
  • 4 cloves garlic, pureed or finely minced
  • 1 pinch salt
  • 1 tablespoons Kraft Grated Parmesan cheese, in a bottle
  • 1 teaspoon parsley, chopped
  • 2 tablespoons fresh grated Parmesan cheese

Instructions 

  • Preheat oven to 375°F (190°C).
  • Clean the mushrooms by wiping their surfaces with paper towels.
  • Combine the melted butter, garlic, salt, bottled Parmesan cheese, and parsley. Mix well, then toss the mushrooms in the mixture until evenly coated.
  • Roast the mushrooms for 12 minutes. At the 10-minute mark, sprinkle grated Parmesan cheese on top, then continue roasting for another 2 minutes. Remove from the oven and serve immediately.

Notes

Do not clean the mushrooms with water or you will have a watery roasted mushrooms dish.

    Hi. In the pics, it looks like you stuffed the parmesan mix in the mushroom. Do you toss it or stuff it? Just wondering. Planning to make this as a Thanksgiving side dish. It looks so good.

    I’m a big time mushroom fan–have loved them since I was a small child and my dad brought them home from his spring forays–and never met one cooked in a way I didn’t love. These roasted ones look delicious. But I don’t think mushrooms are a particularly good meat substitute for your small son as they are actually very low in nutrient value ( http://nutritiondata.self.com/facts/vegetables-and-vegetable-products/2482/2). Not only do they lack protein, but are low in both vitamins and minerals–even as they are powerful in flavor and texture. Maybe including sliced mushrooms as an omelet filling or adding some crumbles of cooked ground meat as a topping to the roasted or sauteed mushrooms would be a way to get protein into his meal. I always have a few meatballs, or some ground meat ready for soup, pasta sauce, or chilie, in the freezer and tossing either of them into a serving of these spectacular roasted mushrooms would trick a small child into consuming some more protein

    Whole mushrooms can be washed but not sliced ones. Mushrooms are 80% water anyway. “Cooks Illustrated” did tests and 6 oz of whole mushrooms washed gained 1/4 of an oz of weight after washing almost all of it on the surface so using a paper towel to dry them or putting them in a salad spinner works too. For more details look up “cleaning mushrooms with water” and click on the mushroom cleaning 101 by Cooks illustrated. If you want to use a brush to clean the you can use a toothbrush.

      I read a magazine before, I forgot which and it was saying that we shouldn’t wash mushrooms but I have noticed myself that when I wash with water, the mushrooms will be soaking in a lot more water after cooking.
