Garlic Parmesan Roasted Carrot
Ingredients
- 12 oz. (350g) carrot, skin peeled
- 2 tablespoons salted butter, melted
- 2 cloves garlic, minced
- 3 tablespoons grated Parmesan cheese
- 1 teaspoon chopped parsley
Instructions
- Preheat the oven to 400°F (200°C).
- Mix the melted butter and garlic together. Coat the carrots evenly with the garlic butter mixture.
- Arrange the carrots on a baking sheet lined with parchment paper. Drizzle the remaining garlic butter mixture over the carrots. Roast for 15 minutes, then sprinkle the Parmesan cheese on top.
- Roast for an additional 10 minutes, or until the cheese melts and is slightly browned. Remove from the oven and top with parsley. Serve immediately.

Brilliant and so easy. I only had very large carrots so we had to slice each of them length wise into four even carrot strips. accompanid with potoes cut in half and also covered with the garlic butter (no oil was used) Best roasted carrots and spuds ever!!!

Just to check if normal-sized carrots need to be sliced lengthwise into halves or quarters for this recipe. I notice that the carrots u used r rather fine.
