Garlic Chive Butter Roasted Potatoes - roasted baby potatoes with garlic, chives, butter and Parmesan cheese. The only roasted potatoes recipe you'll need!
Little G loves baby potatoes, no matter how I make them. He is skinny so I would always feed him potatoes, at least once a week.
I have many roasted potatoes recipes that I rotate with, but I love new recipe ideas.
This garlic chive butter roasted potatoes is definitely one of my favorites.
My friend gave me some organic chives and they smell so good and earthy.
I used a bunch of them and paired with garlic, butter and Parmesan cheese.
I usually slice my baby potatoes into hasselback potatoes but this time I kept them whole.
It was such a great idea as they were so soft and tender in the inside after roasting; the surface were evenly coated with the aromatic garlic chive butter.
The Parmesan cheese added layers of flavors.
The potatoes were utterly delicious and make a perfect side dish that goes well with just about anything!

these definitely take more than 30 minutes in the oven. I used baby potatoes that look just about the same as the ones pictured, they are about an inch in width. they smell great but as of now I’m at 45 minutes and they still feel raw when I’m poking with a fork.
Hi George, just roast them longer if they are still raw. Mine was cooked in 30 minutes.
I cut the baby potatoes in half and threw some green beans in with them. So good! Even our picky 11 year-old loved it!

Thanks Joe for trying this garlic chive butter roasted potatoes recipe.
Can I make these the day before (cook halfway) and finish them the next day?
I think you can but it’s best to cook them one time for the best results and texture!
I sliced my potatoes in half and placed cut side down. It caramelised and added a crunch to the roasted potato in the oven baked potatoes. Loved this recipe!
I have put these together a few time and we love them. We have been camping and using my Griswold Dutch over with charcole or just over the camp . I didn’t put the cheese on until about half way through. I line my Dutch with baking paper to reduce clean up.
