Pork Shoulder
Pork shoulder is a cut from above the pig’s front leg and comes with more marbling in the meat. However, pork shoulder is always labeled with two names in the market, such as Boston butt or picnic shoulder.
Although both Boston butt and picnic shoulder are from the same region, they have different textures. Boston butt is soft, tender, and contains more fat. This part of the meat is an excellent choice for this recipe.
Picnic shoulder is the cut below Boston butt, which has less intramuscular fat and is relatively less expensive. It’s also frequently sold with skin on.
A large cut of boneless or bone-in pork shoulder is perfect for roasting, slow-cooking, and grilling. Try pork shoulder to make a delicious pulled pork dish.

This recipe is great for those on a budget, and it doesn’t have to be pork shoulder, it can be any cheap cut of pork meat you can find. The best thing is to feed a family of four, you only need a piece of pork the size of an iPhone, about 1 inch thick.
I like rinsing the meat until the water runs clear after I make the slices. Then squeeze all of the water out. Also freshen it back up with crushed fresh ginger and green onion mixed with a 1/2 cup of water until milky. Then use the liquid to add moisture back to the meat.
Then I continue with the rest of the recipe.
Doing this step will ensure the meat is moist and tender, and it gets white almost like BK Chicken Fries.
Good Advice!?
I finally made this, and my husband was disappointed there wasn’t more for second servings. Next time I’ll double the recipe for more! Never again will we order this from a restaurant. I followed exactly and used peanut oil. The only item I’ll change is to use a little less Chinese Five Spice.
I cooked this last night, using the exact ingredients, and OMG …. we’ll never order this again when dining out or ordering take-out. My husband ate his with a teriyaki dipping sauce and kept asking for more. I used peanut oil which I use when frying meats or poultry. Thank you, Rasa!
