- Bamboo skewers
Ingredients
- 12 oz (350g) boneless and skinless chicken breasts, cut into cubes
- 3/4 tablespoon soy sauce
- 1 tablespoon sweet soy sauce
- 1 tablespoon banana ketchup
- 2 cloves garlic, minced
- 1 inch (2.5cm) ginger, minced
- 1 pinch salt
- 3 dashes ground black pepper
- 1/2 tablespoon lemon juice
- 2 tablespoons Pompeian Organic Extra Virgin Olive Oil
Instructions
- Soak the bamboo skewers in water for 30 minutes.
- Marinate the chicken in soy sauce, sweet soy sauce, banana ketchup, garlic, ginger, salt, pepper, and lemon juice for 30 minutes. Stir the chicken and sauces together to coat well.
- Thread a few pieces of chicken onto the bamboo skewers, and repeat until all the chicken cubes are threaded.
- Preheat an outdoor grill and grill the chicken skewers. Brush Pompeian Organic Extra Virgin Olive Oil onto the chicken while grilling. Turn the skewers over and grill the other side until both sides are slightly charred.
- Serve immediately for the best flavor.

What can you substitute for the sweet soy sauce and the banana ketchup? I don’t have either!
You can add dark soy sauce and add some sugar and skip the banana ketchup. You can add a bit of lemon juice.

I have two questions Bee- how would you convert this to cook on an indoor grill pan? Sadly we do not have a functional outdoor grill. And second, where might I find banana ketchup?
Hi Valerie, you can make them on an indoor grill, just grill them until both sides are charred and the chicken is cooked. You will find banana ketchup at Asian stores. :)

I cannot find banana ketchup in South Africa…….even though one our most prolific produce is Bananas??
How could I substitute? Blitz a little banana with immersion blender?
You can just skip it and add some lemon juice.
For the Filipino skewers, is banana ketchup called anything else (that you can spell reasonably) or a brand maybe because I will have to ask for help finding it. My specialty market staff often do not speak English and I speak zero Filipino. They look delicious and I am a big fan of lumpia so the skewers would be a nice add to my book!

The brand name is JAFRAN Banana Ketchup. Any Asian store/market carries this product.
