Ingredients  

  • 6 oz. spaghetti
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 8 oz. jumbo shrimp, peeled, deveined, tail-on
  • 1 cup pasta water
  • 1/4 cup heavy whipping cream
  • 2 tablespoons white wine, optional
  • 1 tablespoon butter
  • 1/2 teaspoon salt , or to taste
  • 1/4 teaspoon cayenne pepper
  • 1/2 tablespoon lemon juice
  • 2 cups baby spinach
  • 1/2 tablespoon Italian flat-leaf parsley, chopped
  • lemon wedges

Instructions 

  • Bring a pot of water to a boil. Cook the spaghetti according to the package instructions until al dente. Drain, reserving 1 cup of the pasta water, and set aside.
  • Heat a skillet with oil. Sauté the garlic, then add the shrimp. Cook until the surface turns opaque, then add the pasta water, cream, and white wine, bringing it to a simmer. Stir in the butter, salt, cayenne pepper, and lemon juice. Once the shrimp is cooked through, add the spinach and stir to combine well.
  • Toss in the spaghetti and stir to coat well with the cream sauce. Turn off the heat, top with parsley, and serve the pasta immediately with lemon wedges.

      Hi Janet. You should use wine that you would typically drink with, whether white or red. In this recipe, a sauvignon blanc or chardonnay would work nicely. For red wines, you can use merlot, shiraz or cabernet sauvignon.
