Chicken Meatball Recipe

I am partial to all kinds of meatballs, there is just something so irresistible about ground meat shaped into balls. Every culture has its own version of meatballs.

My favorite has always been my fried meatballs, seasoned with Chinese 5-spice powder.

However, these juicy chicken meatballs are top notch and equally delicious.

They are so moist, with a perfect balance of flavors and so addictive.

Once you try one, you won’t stop eating!

I donโ€™t know what kind of machine others are using to grind chicken. Was impossible to blend in my Cuisinart. Machine started smoking and Iโ€™m not sure it isnโ€™t ruined.

I added contents of a small can of corn kernels & a small can (these are the little cans, size of baby food) and capsicums, handful of parsley, thickened up the mix with Panko bread crumbs, then refrigerated it for a couple of hours to marinate the flavours thru, dusted them with flour, Panko crumbed them, fried them in olive Mobil to brown off, then into the oven on baking paper for 20 min @ 280, fan forced…..Voila, enough for 2 good meals, made a chicken stock sauce for one & a curry sauce for the other โ€”โ€” โ€œYumโ€ !!
