Chicken Casserole with Potatoes
Ingredients
- 1/4 teaspoon salt , or to taste
- 1/2 teaspoon sugar
- 3 dashes ground black pepper
- 1 tablespoon Ranch dressing
- 1/4 cup heavy whipping cream
- 2 medium-sized potatoes, peeled and cut into pieces
- 8 oz. (230g) boneless, skinless chicken breast, cut into cubes
- 2 slices Canadian bacon, or bacon strips, cut into pieces
- 4 tablespoons unsalted butter, cut into small pieces
- 1 cup shredded cheddar cheese
- 1 stalk scallion, green part only, cut into small rounds
Instructions
- Heat the oven to 350°F (176°C). Lightly grease a 9" x 9" (23 x 23 cm) baking pan with oil or butter.
- Add the salt, sugar, pepper, and Ranch dressing to the heavy whipping cream, then lightly stir to combine.
- Spread the potatoes in a single layer, followed by the chicken.
- Sprinkle the bacon and butter on top, then add half of the cheddar cheese and the scallions.
- Pour the heavy cream over the top of the casserole, cover it with aluminum foil, and bake for 1 hour.
- Uncover the pan and bake for an additional 30 minutes. In the last 10 minutes, sprinkle the remaining cheddar cheese on top and bake until the cheese is slightly crusty.
- Remove from the oven and serve immediately.

I no longer use cream since I found canned milk is an excellent replacement, I just need to think ahead for what I will use the rest of the can for! Hmmm. Hot cocoa for tomorrow’s ride to work! I just have a question, Do you precook the chicken breast or put it into the casserole raw. Also the potatoes – any precooking. I have a potato ham casserole and I usually cook the potatoes some beforehand when I fix it as they seem to take so long to cook.

I stumbled across this recipe while trying to get inspiration for dinner. Cut the spuds and chook and put in the dish. Went to the fridge to get cream ? it was gone. While hunting found some sour cream so replaced this in the recipe with a dash of milk to fix the consistency. OMG this is so tasty. 2/3 kids agreed (the other is such a fussy bum and I really didn’t expect him to eat it). Thanks heaps. Will definitely be going in the recipe book

Can you add rice instead of potatoes
I wouldn’t recommend rice.
Very good. The only thing I did do different was mixing most of the cheese in with the chicken and potatoes instead of layering it. It’s a very rich dish but delicious.
