Parmesan Bacon Pumpkin Mashed Potatoes - baked mashed potatoes loaded with parmesan cheese, bacon and pumpkin. Rich, sweet, cheesy and so easy to make!
I had some leftover canned pumpkin from my previous recipes: Nutella Swirled Pumpkin Bread and pumpkin chocolate chip cookies, so I decided to make some mashed potatoes with the leftover pumpkin.
As you can tell from the pictures, this golden-hued and perfectly baked Parmesan bacon pumpkin mashed potatoes is a great side dish for any occasions. It’s rich, cheesy and sweet, and goes well with any main dishes.
In fact, it was so good I didn’t mind to have it as a main entree!
I adapted this pumpkin mashed potatoes recipe from Steamy Kitchen. Since my son loves cheese and bacon, I topped the mashed potatoes with some Parmesan cheese and baked it.
Then I topped it with crispy bacon bits. I served it with the Parmesan garlic noodles and bacon-wrapped shrimp, it was so yummy and we all really enjoyed the dinner.

Parmesan Bacon Pumpkin Mashed Potatoes
Ingredients
- 2 1/2 pounds (1.1kg) potatoes, peeled
- 2 tablespoons butter
- 1/4 cup heavy cream
- 15 oz (425g) pumpkin
- 2 tablespoons maple syrup, or to taste
- salt, to taste
- freshly ground black pepper
- 1/3 cup Parmesan cheese
- 1 slice bacon, cut into small pieces
Instructions
- Place the potatoes in a large pot and cover them with water. Bring to a boil, then reduce the heat to medium-low and cook the potatoes for 20 minutes, or until they are completely tender. Drain the water.
- Preheat the oven to 350°F (175°C). Mash the potatoes and stir in the remaining ingredients until smooth. Taste and adjust the seasonings as needed.
- Transfer the mashed potatoes to a baking dish and top with Parmesan cheese. Bake until the surface turns golden brown, about 15 minutes. Meanwhile, pan-fry the bacon bits until crispy.
- Remove from the oven and top with the bacon bits. Serve warm.

I think it’s called heavy cream too.
When do i add the one can of pumkin? Its not mentioned.
It’s mentioned in “the remaining ingredients” in the Method. Basically, you combine the mashed potatoes with the rest of the ingredients specified in the recipe.
What do you have on top of potatoes? Looks like bacon and something else. Looks really good. I may be making this for Thanksgiving.
