First, cut the fresh cucumber and onion into thin slices.

  • Soak the onion slices in the water for a few minutes while preparing the salad to remove a little bit of pungency.

Ingredients  

  • 2 English cucumbers, sliced 1/4″ thick
  • 1/3 white onion, sliced
  • 1/4 cup fresh dill, chopped

Dressing

  • 1 cup plain Greek yogurt
  • 3 tablespoons white balsamic vinegar
  • 1 tablespoon olive oil
  • Salt , to taste
  • Ground black pepper , to taste

Instructions 

  • Rinse and pat the cucumbers dry with paper towels. Slice each cucumber into 1/4-inch thick slices and set aside.
  • Slice 1/3 of a white onion into thin slices and set aside.
  • Prepare the creamy yogurt dressing in a bowl by mixing plain Greek yogurt, white balsamic vinegar, and olive oil. Then, add salt and ground black pepper to taste. Mix well and set aside.
  • Combine the cucumber slices, white onion slices, and chopped dill in a large bowl, then toss well with the creamy yogurt dressing. Add more salt if desired, and serve immediately..

    I made this creamy cucumber salad yesterday for lunch.
    I kept the sliced cucumber in bowl which had paper towels at the bottom. This kept the sliced cucumber tossed in sliced onion and chopped dill fresh and crispy.
    The yoghurt dressing was kept in a bowl.
    The tossed cucumber and yoghurt were mixed individually for each of my quest.
    In conclusion everyone gave thumbs up.
