Sun Dried Tomato Pasta Recipe

I love sun dried tomatoes; I just love the flavors, aroma and nuance they impart to the dish.

Today, I am going to teach you how to make easy sun dried tomato pasta with spaghetti.

For the protein, you may add chicken. My personal favorite is shrimp.

You can also add cream to the pasta sauce to make it creamy.

How To Cook Sun Dried Tomato Pasta

Sun dried tomato pasta recipe with spaghetti, sun dried tomatoes and shaved parmesan cheese.

To make this pasta, first, cook the spaghetti per the package instructions.

Next, heat up a skillet and sauté the minced garlic and sun dried tomatoes.

Add the spaghetti and chicken broth into the skillet and season with salt and pepper. Before serving, just shave some Parmesan cheese on top and enjoy!

Ingredients  

  • 8 oz (225g) spaghetti
  • 1 tablespoon extra virgin olive oil, preferred or olive oil
  • 1 tablespoon sun dried tomato oil
  • 3 cloves garlic, minced
  • 1/2 cup sun dried tomatoes, cut into pieces
  • 1/3 cup chicken broth
  • salt, to taste
  • 3 dashes ground black pepper
  • Chives or chopped Italian Parsley, for garnishing, optional
  • Shaved Parmesan cheese

Instructions 

  • Cook the spaghetti in salted water according to the package instructions until al dente. Drain and set aside.
  • Heat a skillet and add the olive oil along with the sun-dried tomato oil. Sauté the garlic until aromatic, then add the sun-dried tomatoes. Stir for a few moments before adding the cooked spaghetti.
  • Add the chicken broth, along with salt and pepper. Stir well to combine.
  • Dish out the pasta and garnish with chopped chives or Italian parsley. Shave some Parmesan cheese on top before serving.

    How do you suggest this dish be reheated? In the microwave with some added broth? Or on the stovetop?

      Hi Essie. Heating it in the microwave would be the easiest way, but stovetop option is fine too. The pasta texture will be different from freshly cooked, either way.

        Thanks for responding. Just wanted to let you know that I had added a little extra broth when I cooked this dish so when I did reheat, it turned out just fine. I love overcooked pasta anyway. And it is so good with garlic baguettes. You don’t need to post this, I just wanted to let you know how good this turned out. Second time I have made this.

    My wife was so skeptical about this when she seen just the pasta and stock going in but wow it was so good.

    I donโ€™t know if this made a difference but I used 500ml of the chicken stock and reduced it about 150ml at a time.

    A faux pas. The sundried tomato must be soaked in water to hydrate a little. Otherwise they don’t exude their flavor and are hard texture in texture.

      It’s already soaking in oil. Put it in water? I don’t think so. It’s already hydrated ,with an amazing taste. This is a GREAT recipe. I make it often.
