Cilantro Lime Rice Recipe

Everyone loves Chipotle, especially its famous cilantro lime rice, topped with juicy chicken fajita and salsa.

I love Mexican recipes and this is my Chipotle copycat recipe, homemade, easy and healthy!

Cilantro lime rice recipe.

As the name suggested, this steamed white rice is flavored with simple ingredients below:

  • Cilantro leaves
  • Lime juice
  • Unsalted butter
  • Chicken broth
  • Salt

How To Make Cilantro Lime Rice

Healthy and easy Chipotle  cilantro lime rice.

It’s very easy to make the rice. Everything is cooked in one skillet or pan so there is only one utensil to wash.

First, rinse and cook the rice in a skillet with water, chicken broth, salt and butter.

After the rice is cooked, add cilantro leaves and lime juice to the rice, stir to mix well and serve immediately.

The end result is absolutely delicious, refreshing and appetizing.

The rice is moist, with the wonderful aromas of the cilantro and goes well with chicken recipes (such as honey lime chicken), shrimp recipes or salmon recipes.

Cilantro Lime Rice

Cilantro Lime Rice – easy and delicious one-pot rice with cilantro, lime juice and butter. This Mexican-inspired rice is better than Chipotle.

Ingredients  

  • 2 cups long grain rice
  • 1 cup water
  • 1 1/4 cups chicken broth
  • 1/4 teaspoon salt
  • 3 tablespoons unsalted butter, melted
  • 1/4 cup cilantro leaves, chopped
  • 4 tablespoons fresh lime juice

Instructions 

  • Rinse the rice thoroughly with cold water and drain; repeat 3-4 times until the water runs clear. Transfer the cleaned rice to the skillet and add 1 cup of clean water, chicken broth, salt, and butter.
  • Cover the skillet with a lid and cook on medium heat for 15 minutes, or until the water has evaporated and the rice is cooked through. Turn off the heat, then add the cilantro leaves and lime juice to the rice. Stir to loosen the rice and mix well with the cilantro and lime juice. Serve warm.

    Hi Been, thank you so much for the recipes, Exeter one is a winner! With this one, I usually boil 1 cup of rice with 2 cups water, then, when the water is gone, turn off the heat and leave for 15 minutes, before fluffing with a fork. Should I add the lime juice and corriander after the 15 minutes, or as soon as the water/ stock mixture has been absorbed please?

    1. Hi Peter, thanks for liking my recipe. Add the lime juice and cilantro after the water or stock has been fully absorbed and the rice is done cooking. Stir them in right before serving to keep the flavors fresh.

    I don’t know how long ago it is since I started using a Rice Cooker or even if I have cooked rice successfully without one but I look at these recipes and wonder what I may be missing and then wonder if the process could not be done in a Rice Cooker cos I find it VERY convenient. Do you think it would be OK to simply put the ‘Stove Top’ ingredients in the Cooker?
    I am NOT an intuative cook.

      Hi James, depending on the brand of your rice cooker, some rice cookers will immediately become malfunction if you add stove top ingredients to it.
