Maple-Butter Roasted Baby Carrots
Ingredients
- 10 oz (280g) baby carrots
- 2 tablespoons maple syrup
- 2 tablespoons butter, melted
- salt , to taste
- 3 dashes ground black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Combine the carrots with all the ingredients and toss to mix well.
- Arrange the baby carrots on a parchment-lined cookie sheet. Roast for 40 minutes or until the carrots are tender and soft. Remove from the oven and serve immediately.

I make something similar to this, except I add cinnamon and cardamom powder. If you have those on hand the next time, they really take the carrots over the top!

I recently wanted a good recipt for macaroni salad and remembered when I lived in Hawaii how I love the macaroni salad that they served with there take out orders at a local place called “Zippy’s”.
